After working in fabled kitchens around the world, from Noma in Copenhagen to Marea in New York, our culinary director Giovanni Moncada has returned to Rome to oversee one that’s quite literally close to home — da Mariolino is down the street from where he grew up. Together with chef Andrea De Carolis, a born-and-raised Roman who honed a lifelong love for cooking at Michelin-starred Margeaux in London, EMME in Rome, and other esteemed Roman eateries, da Mariolino offers a relaxed dining experience strongly rooted in Italian tradition.

With a focus on sourcing superior ingredients that are local whenever possible, Moncada, de Carolis, and the kitchen team at da Mariolino cook up classic Roman recipes served in surprising ways. That might mean a raviolo filled with carbonara sauce for a playful take on traditional carbonara, or gnocchetti with clams instead of spaghetti with clams.

Beyond the dishes themselves, Moncada and de Carolis share a passion for creating lifelong memories around the table. Our hope is that da Marioliono becomes a place you return again and again with friends, to enjoy a nourishing meal with clean flavors, curated wines, and laughs that last a lifetime.
